Guatemalan Food Night!

Amber and Dad cooked supper tonight. We had an appetizer of dobladas- these are the doubled over tortillas. Think crab rangoon, only Guatemalan. There is farmer cheese and red peppers inside. For the main dish they made Lomo mechado, or poked beef. It is called this because you poke a paste of peppers, onion, bacon, mustard and garlic into it and bake it for several hours. This was delicious! Everyone ate seconds. For dessert Amber and Dad made Trifle, or Coconut Milk Cake. They said that you could put it in a cake pan or in muffin tins, so Amber decided to do muffin tins. We added powdered sugar to the tops and they were excellent. Very moist and sweet.
Amber helped to do all of this, so when the roast came out of the oven, she wanted her picture taken next to it all. :)

Oh the dobladas look delicious! Would Amber ever feel up to cooking for a family get-together. I also think the dessert items look very tasty, but I can't recall the name of them. She is such a precious girl-yes that's correct I used the ultimate Heubner compliment word patented by G'ma Rose. However, the word truly fits Miss Amber. Remember how we all use to hedge bets on who would be awarded with the fine compliment from G.R. at Christmas time? Ah.. good times (he he now I've just used a Trunnell phrase). I think I've gone multi-familied instead of multi-cultured or maybe I've just had too much coffee.
